Pork Chops with Apples, Apricots & Onions



Bah.  I would apologize for being MIA for the past month, but life happens.  My blog is a hobby, and sometimes it gets dropped for the demands of day to day life.
Like when your husband comes home and tells you he just accepted an internship for the summer with a company in Switzerland.  Hello, paperwork!  Visa applications!  Passports!  Apartment logistics!  Airfare!  Packing with two small children to move halfway around the world!
We'll be back in Seattle come fall; Will still has several more years of his PhD left.  But wow!  What an amazing turn of events!  So I hope you all understand that I've been a bit preoccupied lately with other things.  The crockpots have been making old standbys or super boring food; tonight was the first night I did a *new for the blog* recipe in quite some time.
This is a simple standby in my house.  These flavors just *go* together so well.  I make this all the time.
Doesn't hurt that it's super easy to toss together... and my toddler and husband both love it.  I served it with mashed sweet potatoes, and there were no complaints at my dinner table!
And as for this blog: it may be quasi-orphaned or largely ignored until we get back and settled in to life in Seattle once again next fall.  I will post a few recipes here and there... but this won't be one of my major focuses for quite some time again.  I hope you all understand!  Happy crockpotting!
Serves 4.
The Tools:
4-5 boneless pork chops
2 Granny Smith apples, chopped (peeling is optional - I don't peel mine)
1/2 cup dried apricots, cut into quarters
2 small sweet onions, chopped
3 T apple cider vinegar
1 T cinnamon
1/2 t nutmeg
1/2 t cloves
3 T butter (or olive oil/coconut oil if you don't do dairy)
The Process:
Plop your pork chops in the bottom of your crockpot.
Melt butter in a saute pan.  Add remaining ingredients and saute until onions are translucent and apples are soft.
Transfer mixture to the slow cooker and cook on LOW for 5-6 hours or HIGH for 4-5 hours, checking to be sure pork is thoroughly cooked before serving.
