Weekly Menu
Have you struggled like I have to find a paleo barbecue sauce that meets your standards? I think I found the easiest one ever... so stay tuned, I will share this week!
Shopping. Aldi + Costco + Trader Joe's. With farm eggs and yogurt the total is $165.
"What's to eat?"
Breakfast:
eggs, avocado, salsa
smoothies (w/ fresh yogurt)
sausage & sweet potato hash
coffee w/ coconut milk*
Lunches:
chicken salad (chicken, almonds, grapes, yogurt, lemon juice) w/ celery for scooping
nitrate free mini hot dogs
fudge babies
carrots or veggie chips
fruit
Dinners:
Sunday - shawarma chicken salad
Monday - korean beef & broccoli (paleofied)
Tuesday - sweet potato chip nachos
Wednesday - chicken sausages, sauerkraut
Thursday - shepherd's pie (with sweet potatoes)
Friday - chicken parmesan, roasted green beans
Saturday - against the grain gourmet pizza (load w/ meat and peppers), salad w/ dressing
Sunday - easy jalfrezi chicken, broccoli
I have a potluck on Wednesday. I let my kids pick what we should take. I am planning on attempting these garbage free chick-fil-a nuggets (bake so less messy?) and these mint brownies (using flourless chocolate cake for the bottom layer).
*While I still like my creamer, I think I've finally adjusted to plain full fat coconut milk in my coffee, and it is just a little bit easier than making the creamer. I definitely prefer it in hot coffee, though, so I'm not sure what I'll do over the summer.
