Paleo Taco Salad

This is an easy meal that we eat almost weekly.


Paleo Taco Meat: (this is from the recipe I used to use for chimichanga filling)
1 lb. ground beef, crumbled and browned
1/2 t. salt
1/8 t. garlic powder
1 t. oregano
1 t. cumin
1/2 cup salsa
1/3 cup apple cider vinegar
Mix and heat in a frying pan.
(We sometimes do ground turkey or make a double batch with beef and turkey.)
(I also often add chili powder and onion.)

Serve over lettuce.

Add your choice toppings:
avocados or guacamole
salsa or pico de gallo
chopped bell peppers
chopped carrots
chopped tomato (I always love.)
sliced black olives
sliced mushrooms
(We often just have the guacamole and salsa and that's it!)

Grab a fork and eat!

My youngest is not a big lettuce eater yet, so he will just eat they other stuff, sometimes mixed with some quality (Daisy brand) sour cream if we have it on hand.  I usually do keep some of that sour cream around (which I buy at Costco) for the kids.

I buy the organic salsa from Costco even though it does have sugar in it.  If you are looking for a sugar-free salsa, check out the little cans of salsa with the Hispanic foods at your standard grocery store.  They are usually pretty basic ingredients and quite tasty (we like the salsa verde, too) if you don't mind the whole BPA/canned tomato products issue.  I just try not to use a ton of items like that.  Or, make your own salsa! :)

Something similar but new to me that I want to try: Fish Tacos! (minus the tortillas)
