Super lazy (but tasty!) roast


We had a busy weekend, and I wanted a lazy Monday with the baby. reading books, playing peek-a-boo and generally giggling a lot.

This recipe took 10 minutes to throw in the crockpot, and it was delicious. Some sort of paleo roast generally hits our table every week or so. AND we have leftovers for a day or two.

Brilliant.

The Tools:

- 6 qt. crockpot

- 2 lb. (ish) roast of some sort (mine was a beef chuck roast)
- 1 1/2 cup beef broth
- onion, chopped
- several carrots, chopped
- 2 T Herbes de Provence

The Process:

Put the roast in the crockpot and rub the Herbes de Provence on it.

Cut up the onion and carrot and toss them in the crock over the roast.

Pour the beef broth over the top. Cook on low for 8 hours.

... and giggle and play all day while it cooks away.
