I saw the recipe for Paleo Breakfast Bread and had to try it. Of course, I modified it according to what I had on hand. Here are the ingredients and procedure I used.
- 1/2 cup creamy almond butter
- 2 eggs
- 1 t. vanilla
- 2 T. grade B maple syrup
- 1 T. cinnamon
- 1/4 t. salt
- 1/4 t. baking soda
Preheat oven to 325. Grease an 8x8 square glass baking dish well with coconut oil (or try butter?). Thoroughly mix ingredients together in a bowl. Pour into pan and bake for 12 to 15 minutes. (I did 13 minutes and that was perfect for my oven, but yours may vary.) Better gooey than overbaked! Serves 4.
As you can see my kids and I polished it off easily... I would need to add something else to this breakfast if all of us were at home.
So easy and yummy with the cinnamon, I will definitely be making it again! A fun weekend breakfast.
....for those out there with tree nut allergies, has anyone tried baking with sun butter? We don't have nut allergies and I have no experience with sun butter myself, but had some questions from folks about alternatives to almond butter in recipes... please share any suggestions you may have in the comments!
