Chicken Thighs with Mushrooms



Another busy day at your house?
Tired from being up all night with a teething baby?
Don't feel like cooking for more than ten minutes today?
Here's another simple and tasty recipe to toss in your crockpot and forget about until you're back home in the evening.
Serves 4-6.
The Tools:
6 qt. crockpot
2 T butter
1/2 onion, diced
8 oz sliced mushrooms
2 lbs chicken thighs, boneless and skinless if you can get them
1 T sage
1 T thyme
1/2 T tarragon leaves
The Process:
Melt butter in a saute pan.  Cook onions until they are translucent, then scrape butter and onions into your crockpot.
Plop chicken on top of onions, sprinkle the herbs on top and add mushrooms at the end.
Cook on HIGH for 3-4 hours or LOW for 7-8 hours.  I served mine with roasted carrots and it was a lovely, yet simple meal.
