Orange-Sage Sweet Potatoes with Bacon



I get asked sometimes if I do CrossFit.  I do not.  I think CrossFit is a great workout and I know many, many people who do it or have done it and absolutely rave about it.  My husband did CrossFit when we were dating.  Perhaps we'll do it again someday...
But for now:
1) It's way too darn expensive.
2) There's no childcare, I can't afford a babysitter that often and you have to GO to the gym way too much for what my schedule allows.
3) The workouts are too intense and too often for me, considering I don't get a ton of great quality sleep at this point in my life.  I would never adequately recover if I did the standard CF schedule.
SO I usually do kettlebell workout DVDs twice a week at home, during naptime or early in the morning.  We own several of the Art of Strength DVDs, and can't say enough great things about them.  Love them.
But onto the recipe.  When you do a workout, you need more carbs, right?  These are absolutely perfect for that.  Simple and delicious, pair it with some leftover chicken and a few slices of avocado for some healthy fat.
The Tools:(adapted from BHG.com's recipe)
4 qt. crockpot
3 large sweet potatoes, cut up into uniform sizes
1/4 cup orange juice
2 T honey
1/2 tsp thyme
1 tsp sage
1/8 tsp salt
3 T butter, cut up into small pieces
4 strips bacon, cooked crisply and crumbled
The Process:
Butter the inside of your crockpot insert.  Lick your fingers.  Mmmmm.......
Peel and chop sweet potatoes into mostly uniform sizes.  This will ensure they are all done cooking around the same time.
Mix remaining ingredients together, sans the butter and bacon.  Pour mixture over the top of the sweet potatoes.  Cut up your butter into small little chunks and place it evenly on top of the sweet potatoes, like the picture below.

Cook on LOW for 2 1/2 to 3 hours.  I cooked mine right at 3 hours and they were just about perfect.
Serve with bacon crumbled over the top.
