Paleo Carrot Cake Cupcakes

...with non paleo frosting.


As you know, I wanted to make carrot cake, a grain free version of this wicked easy carrot cake that I found via Pinterest.

Since I was going all-out and making the original frosting, I wanted the cake part of be healthier.

I looked at the ingredient list and determined that it needed alternatives for the flour and sugar, and if it needed oil, it should be coconut oil.  I like to improvise and use what I have, so that is what I did.  I replaced the flour with a combo of almond flour, arrowroot powder, and dried unsweetened coconut.  I replace the white sugar with bananas and honey.  And then I determined it didn't need any more liquid, so I left out the oil altogether.  It was still very moist (and chunky!).  It would not have stayed together had it been a cake.  I made cupcakes.  To make again, I would somehow still lessen the liquid content or use more arrowroot powder in place of almond flour (since almond flour doesn't absorb liquid very well.)

Here's my super moist version of the recipe that I made yesterday.

carrot cupcakes
1 cup raisins
1 15-ounce can crushed pineapple (juice and everything)
1 pound carrots, peeled and shredded
2 bananas, mashed
1/2 cup honey
4 eggs, beaten
1 cup almond flour
3/4 cup arrowroot powder
3/4 cup dried, unsweetened coconut
1 1/2 teaspoon baking soda
3/4 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon allspice

Preheat oven to 350.  In a large bowl, dump all ingredients together and mix thoroughly.  Spoon into paper lined muffin tins.  Makes about 30 cupcakes.  Bake for 25 to 30 minutes.  Let cool in the tins before removing.




cream cheese frosting (this is not paleo)
1 8 ounce package cream cheese, at room temperature
1 stick (8 tablespoons) butter, at room temperature
2 1/2 cups confectioner’s (powdered) sugar
1 tablespoon heavy cream (I used coconut cream)
1/2 teaspoon pure vanilla extract
1/2 teaspoon pure almond extract

Beat all ingredients together with an electric mixer until smooth and fluffy.  Frost cupcakes!

Just so you know,  we are not eating all of these right now!!! :)  In fact, I am feeling the need to do a bit of a paleo reset after the last week and Easter weekend.  Who's in?  This is the last of the sugary desserts for the next month.  My kids will get a few in their lunches this week and the rest are going in the freezer for a good while!
